2nd day Soave and Valpolicella
It is precisely the story of the grape, which extends to the people who work the land, to the traditions of a microcosm and to the sophisticated culture of pairing with regional dishes, which takes our imagination to distant lands by simply swirling the glass. Among the most famous Italian wines, Amarone is the one that stands out the most. "We will visit the Tommasi winery in Valpolicella. Then we will head to Soave to visit the Monte Tondo cellars of the Magnabosco family. Over 32 hectares of land located in the Soave and Valpolicella areas. Monte Tenda, Monte Foscarino and Monte Tondo, from which the company takes its name, constitute the starting point for the family's work and winemaking passion. The Monte Tondo farm organizes guided tours and tastings in Soave. a journey to rediscover traditions and the opportunity to get to know wine as it was once made. In the late afternoon we will return to Verona for dinner and settle in at the hotel.
3rd day
The Prosecco hills enclose a large part of the Prosecco di Conegliano-Valdobbiadene DOCG production area. This area boasts a sparkling wine technique that is schooled and a heroic viticulture, which has been able to shape the harsh soils to make them suitable for the cultivation of the vine. Worked by man since the Middle Ages, over the centuries the hills have taken on spectacular geometries and a curious checkerboard appearance. In these lands, beauty and taste blend masterfully. We will take you to discover villages surrounded by terraces and vineyards. The first enotourist itinerary in Italy goes along the Strada del Prosecco: 90 kilometers covered by car, on foot or by bicycle, to be enjoyed with a glass of wine and a tasting of local cheeses or cured meats.
Our first stop will be Conegliano where we will visit the Oenological School, to discover the secrets of the art of sparkling wine. We will go on to Col San Martino to visit the Graziano Merotto company, one of the leaders among prosecco producers. The company is located in the heart of the Valdobbiadene DOCG Prosecco Superiore production area. The headquarters and winery are surrounded by the hilly vineyards of Glera to testify to the history of the company which has always been dedicated to viticulture. The story of Graziano Merotto starts a long time ago, since the seventies, and one of the pioneers of quality, he decided to get the best from the slopes of these hills having as a main objective respect for the "Earth", the care of the raw material and the search for high quality. We will continue the tour to Valdobbiadene and Miane to get to Pieve di Soligo where we will meet the director of the Prosecco Hills association. At the end of the day, before returning to the hotel we will go to the village of Follina where the imposing abbey of Santa Maria stands.
4th day: The hills of Caterina Cornaro and Eleonora Duse
From Nervesa della Battaglia along the panoramic road of Montello, going down to Crocetta in the direction of Cornuda, we will stop in Maser where we will visit Villa Barbaro and an ancient wine producer, Recantina, which is a native black grape variety that has been grown in the province of Treviso since ancient times. It is a vine that ran a serious risk of extinction with the advent of phylloxera at the beginning of the twentieth century and which recovered thanks to extensive research. Recantina was cited several times up until the end of the seventeenth century as one of the best varieties of the Treviso area and in a survey published in 1874 it was among the most cultivated red grapes in three municipalities of Treviso, two of Asolo and two of Castelfranco. Then, since 1900, there has been no viticultural research mentions anymore of Recantina, as if it had mysteriously disappeared. However, it survives in the memory of the winemakers and also in some old rows and vineyards of the Asolo hills area, especially in the Montello area. We will then go to Asolo where we will visit an extra virgin olive oil producer (Bernardi house) and a winery where we will have tastings and meet the director of the prosecco Asolo docg consortium. At the end we will return to the hotel.
5th day Carso wines: Vitovska and Terrano
Someone said that wine brings to light the dark parts of the soul, Vitovska brings to light the heart of a territory. Its flavour strongly linked to Carso and its elements, the sea, the Carso rock and the bora, represents our land and our way of being. The indigenous Vitovska vine grows on a soil with little red, ferrous and brackish soil resting on limestone eroded by the sea and the Carso wind. The vine is white-berried: the large clusters are pyramidal in shape with rather small and light yellow berries, with clear green reflections. Terrano is a native vine of Friuli-Venezia Giulia, belonging to the Refoschi family. The traditional habitat for the Terrano is found in the iron-rich soils of Carso and for this reason in Austria-Hungary the wines obtained from the Terrano were praised for their medicinal properties and were particularly known in the treatment of anemia. The origin of the name is probably linked to the organoleptic characteristics of the wine made from it, characterized by the strong taste and the intensity of the colour. We will visit a leading company in the area for the production of both wines before going to Trieste to visit the city and spend the night.
Day 6 The "Collio".
At the extreme north-eastern edge of Italy, is Friuli Venezia Giulia with the most prestigious wine-growing areas in the world. We take you to experience the Cantina Produttori Cormòns, established in the late sixties from the foresight of some Cormonese winemakers, who wanted to treasure centuries-old traditions, passionate who, from the beginning argued that the future of vines and wine was not linked to ephemeral fashions, but to the tenacious enhancement of one's territory. We will be received by the director Alessandro Dal Zovo. We will visit the city of Gorizia, and then Oslavia where ancient traditions continue to live thanks to the tenacity of Josko Gravner. Gigantic underground amphorae that, for centuries and still
today, constitute the Georgian method of vinification "by maceration". A place full of charm and history a stone's throw from Gorizia where time seems to have stopped. We will visit two other farms in Dolegna del Collio in San Floriano del Collio. Lunch in a Collio restaurant.
DAY 7
“Colli Orientali del Friuli” Corno di Rosazzo (Meeting with the president or director of the Consortium) - Abbey of Rosazzo, Spessa and Cividale (with a visit to the city). On the way we will visit a couple of famous wineries: Collavini the lord of ribolla thanks to Dedication, love for the land and continuous search for quality: this is the trinomial on which the Collavini family tradition is based. Since 1896, the year the winery was founded, Collavini has been a tale of passion, a strong bond with the territory and a tireless drive for innovation. Channels expressing these values are the wines and sparkling wines of our production, marked by the alternation of the seasons in the Corno di Rosazzo vineyards. and one in Nimis (for Picolit). No precise information is known about the origin of Picolit even if the eighteenth-century botanist Gallesio claims that it derives from a wild vine, known already in imperial Rome, that growers were attracted by the fragrance and sweetness of the berries, they bred and vinified. In the seventeenth century, Count Fabio Asquini, after having refined the oenological techniques related to its production and having transformed it into an indispensable drink at the banquets of the Habsburg court, began its marketing throughout Europe, even creating a brand and an ad hoc bottle, which they made known in the numerous noble circles of London, Paris, Vienna, Moscow and the Papal Court, and made Picolit reach a much higher value than that of other white wines. Of course we will have lunch in an excellent restaurant in the area before returning to Verona for the night.
